How to use the virtual desktop on macOS?

I have tried with Wine-stable 10.0, Wine-devel 10.5, Wine-staging 10.5, and Wine CrossOverFOSS 23.7.1 (based on wine 8.0.1), and the virtual desktop does not launch on macOS.

When launching with:

winecfg

after going to the Graphics tab, "Emulate a virtual desktop" is grayed-out.

In the forum topic Virtual Desktops do not open, Gcenx says "Virtual desktop only works with X11 display driver not the macOS default winemac.drv" but how do I use the X11 display driver?

The Wine Wiki FAQ just says to use the following command

wine explorer /desktop=name,1024x768 program.exe

but that also doesn't work
