How to create a different default WINEPREFIX for each Wine.app?

If I have multiple Wine.apps installed, how can I set each to by default use a different WINEPREFIX?

For example, I would like

• Wine Stable.app to use ~/.wine-stable

• Wine Devel.app to use ~/.wine-devel

• Wine Crossover.app to use ~/.winecx
