I have spoon0042 to thank again, and definitely Bob Wya, for getting GedStar Pro running again. I think I found what was causing my problem as noted at the end of my thread about Mint 20 32-bit application. As such, I think it isn't a wine or winetricks problem but rather something unique to getting GedStar Pro running.
I logged in to the AppDB and went to the GedStar Pro entry but it doesn't show the additional step(s) needed now. For Mint 20 and Wine 5. For this combination, and perhaps for Wine 5 in general (I have no way to know) a new "test" result should be added to the AppDB entry.
- tested in Mint 20 with wine 5.0.1 and wine 5.0.2.
- the library odbcc32.dll must be added with native, builtin.
- in addition it appears one must also be sure that msado15 shows as native, builtin in libraries
- with the above changes the app runs fine
I have no idea where else to submit this request.

BTW - the above never used to be needed. I looked through winetricks and a check of wine version (?) results in odbcc32.dll not being loaded now. I tested this on my system by commenting out the "if" and "fi" around the override. I then recreated the prefix and used the modified winetricks and no longer needed to load odbccp32. Perhaps a bug in winetricks?
I did file a bug report with winetricks as this was not needed in the past as loading mdac28 and jet40 seemed to have included it before.
