How to change OS Wine is imitating?

I've heard that you can change the operating system that Wine is...I don't know, replicating? Whatever. It seems that everyone knows except for me, and I can't find a simple explanation anywhere. Does it have something to do with the registry editor thing? I really need some help.

Open "Wine Configuration" then open the "Applications" tab (usually the default tab) and on the bottom you have "Windows Version:"
