I'm looking for any links on installing Wine 1.8. It looks like it has installed properly but not sure how to see if that is true. I also can run any execute the .exe files and the option to open the exe with wine is not showing int he properties tabs of the files.

Ask on your distro's forum. WineHQ doesnt' build packages for RHEL, and last I heard the distro packages were still pure 64 bit, and hence not supported here. viewtopic.php?f=8&t=23434
