Why in Ubuntu-store install 5 wine? when release 7 and 8?

Are you using Ubuntu 20.04 (Focal)? If so, the older version of Wine is provided by Ubuntu itself.
Wine can't do anything about this.
That's why WineHQ has its own repository for Ubuntu 20.04, which includes Wine 8.0.
