If OpenGL is running for you, could you please upload your Ogre.log somewhere? I have only Direct3d working here (also IBM/Lenovo Thinkpad with Intel GPU), and I've got rendering bugs, too (which I can get rid of by setting VSYNCH:1 - at least), and an awful framerate (i.e. below 5).
If I try to switch to OpenGL, the Ogre library complains about being unable to compile some of its CG programs:

well I didn't really know what I was doing but I tried updating mesa gl or something like that. I know that probably has nothing to do with d3d but after that it worked instantly.
as far as open gl in the terminal I get to where it says loading ogre or whatever then I get an error and it crashes. d3d seems slow though but this computer isn't that fast anyway

Now I can run Torchlight in Opengl with good performance.
I wanted to say that the full and correct path to the settings.txt file is:
/home/dong/.wine/drive_c/windows/profiles/<username>/Application Data/runic games/torchlight
At least on my system

I do not know about this specific program. But keep in mind that there are
many applications which have trouble with task switching (alt+tab) even
running under a real Windows.
There are two general solutions:
1- First, see if the game can run windowed. Then, if the title bar bothers
you, you can reposition it(either manually or with a tool).
2- If that fails, you can run it inside a Wine Desktop. That way the
application never knows that it has lost focus.

Thanks for the guide lgtspecb, I certainly never would have gotten Torchlight going without it. In case anyone else has the same problems as I experienced here is what I did differently from your guide:
In Step 4 I just did 'sh ./winetricks vcrun2008'. For some reason including 'dcom98' screwed up everything and I couldn't run any wine programs afterward (had to regenerate my .wine dir).
I was installing the Torchlight demo via Steam (I assume this applies to the full version as well), you have make sure after you've downloaded it to exit Steam (including the tray app). Otherwise when you try to run the game in safemode it won't work since Steam is already running not in safemode. Maybe this is obvious to others but it took me a bit.
The demo runs well for me. It gets a little laggy sometimes but maybe I can play with the detail settings a bit. Annoyingly trying to enter the settings menu in-game causes Torchlight to crash but I can manually edit settings.txt.

I know you can deactivate the window decoration so it just looks like fullscreen if the game runs in the same resolution as the desktop. But I tried this directly after installing torchlight and remember that sometimes the window was shifted so that you could see part of the game and part of the desktop. Was the window decoration removal thing with winecfg what you meant?
Anyway I will give the window-mode a try and remove the window decoration and see what I get.

The result was that running the game in window-mode intergrates it very well into the desktop-environment. You can alt-tab away from the game and back to it, minimize it and all that stuff.

Before everybody starts telling you to remove Pulseaudio I'll advise you to google a bit about it: "Pulseaudio" and "Ubuntu Pulseaudio" should help you understand what Pulse is all about. I always follow that guide. Make sure that you only have ALSA selected in winecfg and don't forget to really google about Pulseaudio. I personally have never had to remove it in any of my 5 installs over here, but I always do everything I need from the guide I pointed you to. If that fails, then proceed with Pulseaudio's removal, that's not my "area of expertise".

I had originally had much of the same lag and various problems as other users, but after completely wiping my .wine directory and removing and reinstalling the wine and winetricks debs, I managed to get TL running on my box.
I used winetricks to grab Directx9 and vc2008, and the game runs wonderfully, probably better than my brothers newer laptop using Vista.
Even with all graphics options on maximum (except AA and HW skinning which I leave off) I'm still running 40fps average *woot*
Now however, the game will randomly freeze (sometimes on level change or portaling) and won't let me do anything, even alt+tab or drop to wine desktop. I have to drop to tty1 and kill wine, or sometimes hard reboot. This perplexes me, and as a new wine user, I am unaware of where to look for wine logs (I guess I could use debug mode until it crashes to get a mem dump?) Laptop is *not* overheated, either.

I used winetricks to grab Directx9 and vc2008, and the game runs wonderfully, probably better than my brothers newer laptop using Vista.
Even with all graphics options on maximum (except AA and HW skinning which I leave off) I'm still running 40fps average *woot*
Now however, the game will randomly freeze (sometimes on level change or portaling) and won't let me do anything, even alt+tab or drop to wine desktop. I have to drop to tty1 and kill wine, or sometimes hard reboot. This perplexes me, and as a new wine user, I am unaware of where to look for wine logs (I guess I could use debug mode until it crashes to get a mem dump?) Laptop is *not* overheated, either.
