There are no 5.0 winehq-stable packages for 20.04 because 20.04 did not yet exist when 5.0 came out. When 5.0.1 comes out, we will have packages for it. In the mean time, there are wine-devel and wine-staging packages in our repository, or if you want to stick with the stable branch, use the distro package.
