Some time ago, I started to perform a regression test (on the game Obduction, GOG version).
Because I was too late, when I isolated the (months old) commit, the game didn't behave the same way with the latest (git) version of wine .
This means that I have now one commit where the game's behavior goes from 'good' to 'bad1' and another where it goes from 'bad1' to 'bad2'.
My question is: Should I file what I found under one bug report, or two bug reports that link to each other?

You'd only want to combine the bug reports, if the regressions were directly related to each other.
Typically lots of very targeted bug reports, is the "official" goal for the Wine Bugzilla.
Bob
