Maximum Number of Threads?

I've been debating between a 3930k and a dual Xeon build for the work I'm doing, but I'd like to game a bit in Wine too. I was wondering, can Wine take advantage of those extra cores? Will Wine ever use more cores than he Windows program that it's running? The way it is described in the documentation, Wine can reassign Windows threads to their Linux equivalents, would this make a difference?
