Pyxel edit works but crashes when top panel is clicked
I have successfully installed the Pyxel edit software with wineHQ. Sadly when I click the "File edit selection document , etc..." banner the application crashes.
Any help would be greatly appreciated.

Please ensure you have the current Wine Development release (currently version 3.12), for your (as yet unspecified) Operating System.

Please can you post the full terminal log and any backtrace you get.
Either do this inline (<200 lines) or on a pastebin-type site.

You aren't going to get very far with a pure 64-bit Wine - as you've demonstrated.
You need to install the 32-bit libraries for Wine to be at all useful.
Most Windows installers are 32-bit, as are many Windows programs.
Please can you follow the WineHQ Wiki: Ubuntu guide to installing the winehq-devel package, using the WineHQ repositories.
Many programs have issues running in a 64-bit WINEPREFIX.
This necessitates the use of 32-bit WINEPREFIX's - see WineHQ FAQ: 6.5.3 How do I create a 32 bit wineprefix on a 64 bit system?

I have followed all the instructions and reinstalled the program in a 32 bit wineprefix, but now it does not even open. I get an error message that says: "there is no windows program configured to open this file".

You're currently using the default WINEPREFIX as a base and trying to reference a "remote" C:\ directory...
Which obviously is not going to work!
Obviously that env override can be added to a GUI launcher .desktop file - but only once you get the application working!

It should not be possible for a 64-bit Windows application to be installed in a 32-bit WINEPREFIX.
Yet you've arrived at situation...
The alternative is the 32-bit part of you Wine installation is broken.

Honestly, I now feel like I know even less about linux, wine and everything than I did before I have started. Thank you very much for your help, but I think I am giving up for now. I feel like the information online is too scarce, cryptic and hard to follow on this topic. If you would have some materials where I could read up how to set up everything correctly I would be the most grateful.

Been banging my head against a brick wall, trying to setup mingw today - so I know the feeling!
It's worth setting aside a some time to read through the WineHQ FAQ and just play about with the Wine basics.
E.g. create a clean 32-bit WINEPREFIX, check the env variable is set correctly, install something to it, view in the uninstaller app:
