Mario Forever incapable of remembering keymap

Mario Forever (versions listed here and others) now load with wine, however, as soon as you select NEW GAME the thing forgets all assigned keys.

In the main menu, you can go to OPTIONS, and see that all commands are EMPTY (no key assigned). If you assign keys, leave the screen (but don't start a new game) and return to it, they're still there. But lo, start the game, and mario won't react to any of your keystrokes!
Going back and looking at the keymap reveals it's blank again...

Any idea how to deal with this?
