The error message is pretty clear: you cannot run a 64 bit application in a 32 bit wineprefix. Assuming your system is 64 bit, you must have intentionally created the 32 bit wineprefix, because 64 bit is the default on a 64 bit system. If the problem just started in 6.10, it could be https://bugs.winehq.org/show_bug.cgi?id=51222. It's already fixed in git, so 6.11 will have the fix when it comes out.

There is no stable package yet for 21.04 because Ubuntu 21.04 did not exist when 6.0.0 came. There will be stable packages when Wine 6.0.1 is released, which should be soon.
