With the Patch program. However, this is more a developer question than
a User question and really should be in the wine-devel mailing list.

Well I doubt blankd3ckskat3r should be asking anything on wine-devel. I don't think he/she is anywhere near developing anything.

This place is just fine. Only questions need to be better. The properly asked question is 50% of the answer.

http://www.gnu.org/software/patch/

You still asking the wrong questions :)

The patches you are referring to are the source code patches. You have to have Wine's source code and have it compiled first before you can apply any patches to it. To compile Wine you'll need lots of packages: http://wiki.winehq.org/Recommended_Packages

even if you did apply the patches and build wine yourself, my understanding is that iTunes still has other bugs which prevents it from being fully functional

You can bump all you want, but iTunes probably won't
work really well in Wine for some time.

Instead of bumping the topic, try running iTunes in wine and file bugs
for any issues not already reported.
